These pumpkin chocolate chip cookies will become your new favorites! I have a quick little fall recipe for you today, and it only takes five ingredients. I saw this on Nesting With Grace and decided to give it a try. Let me tell you, these cookies have quickly become one of my favorites and have been in a constant rotation since the seasons changed!
Pumpkin Chocolate Chip Cookies
Ingredients:
1 package of carrot cake or spice cake mix (use dry)
1 cup shredded carrots
1/2 cup chopped walnuts
1 cup of chocolate chips
1 can of pumpkin puree
Recipe:
Preheat the oven to 375°.
Combine all ingredients into a large bowl, mixing until all the dry cake mix has been combined.
Use an ice cream scoop to scoop out 2” balls of dough onto a greased baking sheet.
Bake for 15 minutes.
Let the cookies cool overnight and then refrigerate.
The easiest cookies that are semi-healthy (I mean, they have shredded carrots in them!) Enjoy!
